An unusual lactone with a complex sweet-toasted scent profile, reminiscent of caramelized sugar, coffee with milk, but also with a spicier facet recalling fenugreek or licorice.

Beyond its obvious applications in gourmand compositions, Levistamel can be successfully used in other fragrance types. It brings interesting nuances to herbal and foresty scents (e.g., pine).

It is notable for its very high tenacity, lasting for many weeks on a blotter. Due to its intensity, it is typically used at low concentrations, recommended up to 1% in the fragrance concentrate.
