2-hydroxybenzaldehyde is a molecule far less known than the popular Benzaldehyde. Its odor is also almond-like, but darker, more roasted, and less sweet compared to Benzaldehyde.

In nature, 2-hydroxybenzaldehyde is found in roasted buckwheat groats, beer, and also in castoreum extract.
