A very powerful ingredient with a warm, caramel profile, distinctly softer and more refined than classic furfural. Smells like heated sugar, freshly baked pastry, and lightly browned crust, with delicate almond-cherry nuances and a roasted grain note. Works wherever you want to add a heated sugar effect to a composition – in gourmands, tobacco accords, coffee, chocolate, and autumnal-spicy accords.

Works very intensely in formulas, so it's best to start with trace amounts. In small quantities, it adds depth and appetizing warmth without excessive sweetness; blends well with maltols, coffee notes, pyrazines, vanilla, and materials with nutty and rum profiles. An excellent ingredient for building a realistic caramelization effect that cannot be achieved with "sweet" notes alone.
