2-hydroxybenzaldehyde is a molecule much less known than the popular Benzaldehyde. Its fragrance is also almond, but it is darker, more roasted and less sweet than Benzaldehyde.

In nature, 2-hydroxybenzaldehyde occurs in roasted buckwheat, beer, and also in castoreum extract.
